Two earlier reviewers offer fine and informed reviews of this book; reviews that go into useful detail. Make no mistake: this is a very fine book on the craft of charcuterie. It begins with herbs and spices, goes on to talk about a range of tools and equipment--both simple items and 'nice to have' ones and clearly presents recipes from 'The Fatted Calf' and the techniques used to produce them. Reviewers have rightly praised the full-color photos in the book: they are particularly effective teaching illustrations for 'breaking down' cuts of beef, poultry, pork, rabbit and so on. These photos are the best I have seen in twenty-some years of buying books on this subject. Interested readers will know how to produce any of the items presented in the book and will be ready to add other charcuterie books to their collection.This book and its recipes 'delivers the goods' on many specialties. I am particularly grateful for the porchetta recipes, of Italian inspiration. I ate wonderful 'street food' porchetta sandwiches in Tuscany and tried to imagine how to do this 'at home.' Now I know. You will know, too, if you can 'transpose' the seasonings from one meat to another (rabbit to pork) or can move the same seasonings on to the recipe for a 'Cuban' presented a few pages later. Francophiles will find a very fine recipe for cassoulet.One earlier reviewer notes what I can only echo: there are a good many recipes for baking and roasting items. Readers will appreciate that, even if going so far 'downstream' from making sausages and terrines and curing meats is unexpected in a book of this type. Chapter titles include: The Charcutier's Pantry; Provisioning the Larder (they mean a root cellar); In the Butcher Shop (where the photos of breaking down the cuts are concentrated along with unexpected and useful information about meats and fats); Skewered, Rolled and Stuffed (Items); Sausage, Salami and their Cousins; Pates, Potted Meats, Terrines and Loaves; Brined, Cured and Smoked and what the authors call 'Accoutrements'--really, condiments. This last chapter goes beyond the technical scope of 'charcuterie' but will be of interest for its recipes on bread and butter pickles, cucumber dills, pickled red onion rings, chowchow, mostarda, chutney and the like.You WILL want to buy this book for your working library but it is not necessarily the first book you should buy. In recent years, the Marianski brothers book 'Home Production of Quality Meats and Sausages' includes better ideas and techniques for curing and smoking hams and for making breakfast sausage--my first foray into charcuterie (but I began with Fanny Farmer and Rytek Kutas' almost encyclopedic book on the commercial sausage kitchen.) The Marianski brothers offer a wider range of recipes than this book does but their recipes are different and not necessarily better. They do offer better instruction on using sodium nitrate and sodium nitrite as essential preservatives right in the recipe for many cured meat items. My recommendation would be to purchase both books. Taken together, they provide an up to date coverage of a fascinating and tasty culinary subject.

As others have said, the best section of this book may be chapter 3, "In The Butcher Shop," which combines recipes for different types of meat with step-by-step photographs of how to butcher or prepare the meat. If you're buying whole animals or primal cuts in order to get higher quality meat, this is a great book to show you how to break them down and use the different cuts.There are lots of good recipes for cooking a variety of cuts from a variety of meats, but if you're mostly interested in sausages and cured meats, you won't find much here that hasn't already been covered extensively in other books. Chopped chicken liver, basic burger, saucisson sec, pepperoni, headcheese, meatloaf, pastrami – they stick pretty close to the classics or greatest hits. If you already have a copy of Ruhlman and Polcyn's Charcuterie (almost ten years old now), you won't find a whole lot that's new in this section.A professional or anyone wanting to make larger quantities will be disappointed or frustrated to find that all the quantities in the recipes are given as dry measures – teaspoons, Tablespoons, cups. Since a half cup of one kind of salt can weigh as much (ie, contain as much sodium chloride) as a cup of another type of salt, dry measures are inherently imprecise. For a novice without an accurate gram scale, this makes the recipes more approachable, but it won't satisfy more serious meatheads.

Great book for getting started with home curing. Beautiful pictures, great recipes. I have had the pleasure of visiting the Fatted Calf in Napa. What delight - they make alot of the recipes that are in the book. I highly recommend this book if you have interest in learning how to cure and make other old school recipes. It's all the rage right now and rightfully so - get away from all the processed edible food like products and back to old school basics. This is a lost art - hopefully more people will not be so intimidated and give it a try.

Great photos, awesome narrative about why charcuterie is important to this team, and superb treatment of often complex topics.I would think a beginner would enjoy this book and have some good early successes with its recipes. Those with experience will undoubtedly like the story and the pics, but may get a bit bored with the recipes.I say in my headline that this book "blurs" the edges...I say that simply because the recipes are not for a charcuterie purist, but rather someone who loves hanging around a wicked cool, edgy meat and deli shop.Now, I don't mean "blur" in a bad way (see, I have it all stars!), but rather how it fits in its genre. So, if you want down and dirty, with little story, then purchase Ruhlman's book on the matter. And if you want super dry, then buy the CIA edition.

Thought this would be more recipes for curing salamis, prosciutto, hams etc, instead it has some really nice recipes for different game and domestic meats. Beautiful pictures throughout and really good pictures and descriptions for buttering all types of animals. Would definitely recommend this book for the meat eater chefs out there, it just wasn't exactly what i was looking for.

The authors clearly know the subject in depth and have extensive experience in the art of charcuterie. I consider this a must for anyone who wishes to try making at home sausages and cold cuts. It is more than just recipes, it gives information on how to cut meats, seasonings for sausages and dry curing or smoking.Pictures and drawing are superb and very clear, and there is an extensive list of resources.A short review cannot do the book justice.I purchase this book and two others: "Charcuterie" (similar title but a different book) and "Salumi" and consider them the Holy Grail of the art of charcuterie. Each of them is well worth the price.

As I get started, please note that I am already a bit of an Enns-fan and a reader of three of his other books: “The Bible Tells Me So”, “The Sin of Certainty”, and “Ecclesiastes (The Two Horizons Commentary)”. I have “Inspiration and Incarnation” queued up on the shelf as well. I should disclose that I also listen regularly to Pete’s podcast, “The Bible for Normal People”.So then, who is this book for?* Are you a frustrated Christian who doesn’t understand why there is a difference between what you are reading and what you are being taught? This book is probably for you.* Are you barely hanging on to your faith and worn out due to the inability to defend the Bible in its strict evangelical or fundamentalist context? Or, have you seen the Bible weaponized as a tool to fight a cultural or political battle? Perhaps this book is for you.* Have you given up on your faith because the Bible as you were taught, no longer makes sense or it seems contradictory or it doesn’t feel relevant to your life? This book is definitely for you!I am a bit of all three. I’ve deconstructed views and doctrines, reconstructed them, and started over again. That’s not a bad thing.Why am I a fan of Pete and why am I giving this book five stars and a hearty endorsement?I think the main thing is that Pete is both a PHD scholar and a guy who is trying to live a Christian life just like me. He is not only an academic, but he has developed concepts in this book that just plain make a lot of sense. The book is not dry and academic. It’s full of humility, grace, and humour. Lots of humour! Here’s an excerpt from page 18:“I live daily with the very difficult tensions of being an unavoidably modern-day human while embracing an ancient faith, rooted in an ancient, ambiguous, and diverse book—which is to say I have to continue to walk this path of wisdom. I’m not at the beach planted in an Adirondack chair cradling a Corona waiting for the rest of you to show up.”The book is also chock full of Pete’s personal anecdotes. Seriously, you will be laughing out loud in Starbucks and people WILL look at you weird. Don’t skip the footnotes. There’s gold there. You will have a fun time reading, and it will go fast. I went quite slow stopping to read so much to my wife that she banished me from the house just to finish before release day.Now for the more serious bit. The GOAL of the book is to demonstrate Pete’s method for really reading, understanding, and applying the Bible. Pete being an academic, I am always surprised how he presents his knowledge in such a conversational manner. Humour (yes again) and a dose of repetition. Spoonful of sugar and all that… The repetition serves the purpose of getting the ideas into you head. It didn’t bug me, I don’t think it will bother you.In my time as a Christian, I’ve been asked the two following—now cliched—questions about the Bible:* Do you read it figuratively or just literally?* Do you read it literally or just figuratively?The answers are No and No.Pete identifies three key concepts that address those two questions and others but avoiding the liberal/fundamental traps. There is a better way:**The books of the Bible are Ancient, Ambiguous, and Diverse, and those books if understood properly lead to Wisdom.**Brian Zahnd recently said, “Jesus Seminar liberalism and Young Earth Creation fundamentalism are two sides of the same empiricist coin. An obsessively historical-critical approach to the Bible ends up having to either defend everything (Ken Ham literalism) or deny everything (Schleiermacher liberalism). A far healthier approach is the pre-Enlightenment patristic approach to biblical interpretation where the sacred text is never an end in itself, but a repository of wisdom guiding us toward the perfect revelation of God in Jesus Christ.” I think Brian got an advance copy of this book too!Pete develops this idea early and spends most of the book refining and applying the concept to topics and issues we all might have questions on. Read the Table of Contents to see what I mean. I reread chapter 11 -13 a few times. They stood out as something I needed just now.Pete really sets out to demonstrate that the Bible is not an instruction manual that you can go to for DIYing your life. It isn’t a Popular Mechanics library. The Bible has too many difficult passages and seemingly contradictory sections for that. He stresses the timeliness or occasionality of Biblical instruction. One instruction might be appropriate for one circumstance, but not for another. Wisdom is understanding when and how to apply those instructions. Here is another short excerpt regarding Proverbs 26:4-5 which contain contradictory statements if read in flat literalism:“It models something better: the permission to think it through, figure it out, and learn from experience for the next time. In fact, more than giving us permission, the contradiction sets up our expectation that we *will have* to think it through. And I bet some of you might have thought ‘Contradictions’ in the Bible were ‘Bad’. They’re not. They’re revealing.”Fundamentalists have a really hard time with this. To them it’s scary stuff—all passages must be true at all times and places. To me, the fundamentalist rigidity is scarier and doesn’t mesh with what I actually read in the Bible. That its ancient, ambiguous, and diverse really stands out to me, and I am glad Pete was able to articulate it in this way. The book has released me from some old indoctrinated ideas. I don’t think though that Pete’s concept of wisdom frees you to the point of extreme libertarianism; it’s just a refreshed foundation—old come new. I’ll repeat myself here, it makes A LOT more sense.So that’s about it. Serious bits. Seriously funny bits. Wisdom about the Bible. The Bible’s wisdom pointed at difficult topics and issues. Wisdom not answers. Read this book. Read it again in a group setting open to discussion like I hope to. Peace be with you!ps. I fully expect to come back and add to this review after that second read. I am sure I missed important points or didn’t really get what was happening here and there. My issue not Pete’s.

The first time I bought Pete's book "The Sin of Certainty," I was so frightened by it, I threw it away! Not kidding. I had to go buy it again after my heart stopped skipping beats, so ka-ching, Pete, you sold that one twice! I have now read all of Pete's books, and this is another gem. Using numerous examples from the Bible (and personal anecdotes as explanation), he illuminates how God has been reimagined throughout history, based on culture, circumstances, and especially the teachings of Jesus.This book is definitely recommended for those who have had Bible verses thrown at them like stones, who have had proof texts shoved in their faces, or those, like me, who love digging deeper than the surface to discover, with an open mind, what God is up to in the scriptures.

His style of writing is so conversational. At first I’m thinking he’s just covering different topics and examples of how God's people were forced to reimagine God in ancient times. But these examples aren’t randomly placed. Pete is actually telling a story. And with each changing cultural backdrop (Iron Age, Assyrian empire, Babylonians, etc.), the ancient Israelites found themselves having to adapt their view of God.This approach to reading the Bible has allowed those ancient scriptures to decompress and breathe again. There’s “time and space” between those pages. What’s refreshing is to see how God was viewed at different times in different places.Great book. Highly recommended.

Perkins does a great job of explaining basic concepts to beginners, although the structure is often disjointed and even repetitive. For this type of reference, I prefer a physical book. Perkins uses this book as much as a digital shopping list as he does as a DIY book, so a Kindle version may make more sense than the paperback. There are also some editing and formatting issues which detract from the read (and begs the question on pricing), still a good place to begin though!

As a scrimshaw collector, I had no idea there was a book like this that could guide you through the process of actually making it! It's very comprehensive for a short manual, and includes lists of resources, websites, material and tool suppliers, scrimshaw museums, everything really. It's great, and I just completed my first scrimshaw piece on burnished shed deer antler! If you're even the tiniest bit interested in scrimshaw you need this book!

This book is unlike any other book on scrimshaw that I've bought. Andrew runs a web site where he discusses all things to do with Scrimshaw, its a real passion with him. Andrew excels at encouraging all who come across his site to give Scrimshaw a go especially those who lack any ability to draw and hence think it best left to the artistic few. This book is an extension of his web site and not just shows how to Scrimshaw but in minute detail how to get the picture onto the ivory, it really is the A B C of learning how to scrimshaw.Rod Lacey

Very disappointing book. While 67 pages in length, the bulk of this "book" is empty space and URLs. Do NOT buy if you want actual detailed discussion of history, technique, and theory. You are better off looking at YouTube or reading a paragraph off of a website. Not worth the money.

I purchased this as a Kindle book. It is one of the best books to get you started on Scrimshaw. I have been searching for several years for information on the techniques of scrimshaw...and I found it. Very detailed with close-up pictures demonstrating the technique and how it looks once ink is applied. A true artist not afraid to share to keep the art alive. I recommend to anyone, young and old who is looking for an inexpensive hobby.

A very good book if you want to learn scrimshaw. The author walks you through step by step exercises to hone your skills while learning the ways of the scrimhander. Gotta love the kindle format. I didn't have to wait for shipping and I don't have to worry about trashing a paper book in my studio.

I came to this book quite by accident - I loved Brian Selznick's The Invention of Hugo Cabret and am presently reading Wonderstruck by the same author. As I was surfing this site, I saw this title pop-up and it captured my attention for two reasons - one, that it featured Houdini, and second, because my daughter had enjoyed Hugo (we read the book and watched the movie), and I thought we might enjoy this too.A cold winter's night afforded us the perfect opportunity to snuggle and read this. The story weaves in fact and fiction. Ten-year-old Victor is inspired by his idol, Harry Houdini and tries in vain to walk through walls, escape from a locked trunk, and perform magic tricks - all of which do not quite turn out right. Then a chance encounter with the great magician leads to Victor receiving a mysterious letter stating, "A thousand secrets await you. Come to my house..."This leads Victor on an adventure of sorts - he comes into possession of a box with the initials E.W., gets all upset that it is not Houdini's box, and vows never to think of Houdini ever again. It is only years later, as a grown man with a child of his own, that young Victor makes a startling discovery!The book is heavily-illustrated with Selznick's wonderful crosshatched pencil drawings, which add to the magical element of this story. There's also a brief biography of Harry Houdini, the author's explanations of his research into the Houdini Box, some early sketches, and even magic tricks that can be easily performed! There's also suggestions for further reading on Houdini. This is a book to inspire and delight!

This was an interesting book, learned many things about Houdini that I never knew. My son really liked it too. They only thing my son wished for is that the book was longer and had more to the story. However he liked it.

Fans of Harry Potter as well as fans of prestidigitation will definitely enjoy this short book. Of course, it's (kind of) about Houdini -- particularly a young boy's fascination with the magician and his feats; and there's a wonderful twist at the end. The illustrations are also terrific, soft but detailed, with lots of things to look at. A fine "read to me" book that everyone will enjoy again and again.

Another teacher introduced this hidden gem to me. She found her copy in the school library's discarded box. She raved about it, so I just had to read it, and once I read it, I had to purchase my own copy of it. It's a story about a boy who wants to be a magician and meets Houdini by chance. It's a magical story with lots of opportunities to question, predict, and infer!

I purchased this book for my classroom library (I teach middle school Reading/Language Arts) because many students have read and enjoyed "The Invention of Hugo Cabret." All of us who have read this book have liked it very much. It's especially good for students who might read at a slightly lower than grade-level, but are aided by the excellent pictures.

My son is 9 and dislikes reading but he read this book in about a half hour and liked it! The Houdini Box has many pages with great pictures and also many pages with a few short paragraphs. A child who dislikes reading becomes overwhelmed when faced with page after page of WORDS and this was not like that. It kept him turning the pages! Also the story was interesting and to the point- no unnecessary babbling on and on to discourage a child with a short attention span. I thank the author for seeming to understand how to grab the attention of the tough to grab!

My students were fascinated with this book! I did not read the last page to my students. Their assignment was to write their own ending to the book. This was a well-received activity!

I gave this four stars because this is a look into the history of not only the crime but some of the legal system of another country. It is something I was not that familiar with until I read this book.At this late date, it is impossible to make a true determination as to how Louisa's husbands died.This book shows how little real forensics were performed at that time. Since that time, methods for handling evidence, chemical analysis, technology, and medicine have made huge advances. More is known about how diseases affect the body, diagnostics have improved, and doctors have more testing methods to accurately diagnose illnesses. Also detection of poisons and their effects are better understood.Many of the reported symptoms of both Charles and Michael are common to a number of illnesses prevalent at that time.Charles Andrews' death was most likely correctly diagnosed at the time of his death. Considering the living conditions of the area in Botany, the probable condition of the drinking water, lack of proper sewage, and the unhygienic working conditions at the time, Charles was lucky to have lived as long as he did without any serious illness.Based on the information in the book, the evidence was mostly circumstantial combined with a host of speculation based on very little scientific or medical basis in fact.No testing or investigation was performed on the soil or water around the home or in the workplaces of either Charles or Michael. It was clear that both were exposed to arsenic, viruses, bacteria, and possibly a variety of other toxins in their homes and work. The routes for pathogens was not well understood at that time nor were there many regulations regarding toxic chemicals in the work place. These could not be discounted as the cause of death for either man.No mention was made of the rat poison until the trial based on statements made by minors who had obviously been coached in their testimony.The prosecution did not produce any evidence that Louisa even purchased or borrowed rat poison. She was easily recognized in the area and no merchant or chemist testified to selling rat poison to her. No neighbors came forward stating she borrowed the poison for them.Mr Lusk did not put up much of a defense and a case could be made for an appeal based on his mishandling of the case. This shows how much a justice system can be biased against the poor who cannot afford to retain a decent lawyer and do the proper research. Unfortunately this is still the case.Most of us only have knowledge of hanging from movies where it always appears quick and efficient. This exposes the horrors of the reality that was most likely the norm.The follow up on Louisa's children was interesting. It is not often that the descendants are discussed in books on historical crimes.I also found it interesting that this case provided a tipping point for women's sufferage in Australia. The historical background on this was good. I found it a bit frightening that women were not allowed to sit on juries until 1947 in Australia.At times the book was repetitious and the style was more conversational. This lead to the structure being a bit disjointed and meandering. The syntax could have been edited to flow better. In that respect, the book read a bit like a college thesis rather than journalistic prose.However, I do recommend this to anyone who likes history or true crime.My opinion is that an innocent woman was brutally hanged for a crime she did not commit.I suggest others read it and form their own opinions.

A tragic story of injustice by the Australian government against a poverty-stricken widow. Set in the 19th century on the eve of Australian statehood and the birth of the women's rights movement. Overington's attention to detail and accuracy is to be applauded.

Ms. Overington's book is an interesting read on multiple levels. As an avid history buff, I appreciated that the book presents all sides of the issue.The introduction states that the first question to answer is whether or not Louisa Collins was guilty, then reminds us of the historical context (women could not vote, participate in government, nor earn a living wage equal to what a man could earn). Throughout the book we are introduced to a parade of participants and how their actions affected Louisa's life.The author has carefully examined the historical events, quoting only when documented and backing up her statements with many footnotes. I enjoyed the Epilogue where the author details the lives of those people who were involved in Louisa's trials. It was also interesting to examine this little slice of history and see how it helped to bring change to a country and how some people began to spread that change throughout the world.Excellently written, this is a quick and enjoyable read.

Boring in that repetitiveness. Still a good history of an interesting time in Australia's turbulent early days. I liked the way the author traced the lives of those who figured so strongly in the life and tribulations of Louisa Collins. Thge miscarriage of justice that precipitously ended this troubled woman's life is shameful. Its wider meaning is not easily missed in the story of the fight for women's suffrage in Australia. All in all a good read for only a couple dollars.

I came to the book because of the genre, but was delighted with the transition to an exploration of the history of women's suffrage in Australia. I have long appreciated the connections between the temperance movement and social justice/social service advances, and how that in turn made the need for a political base for women crystal clear. It is fascinating to see Overington make a case that much of that development in Australia found focus in a particular death penalty case. Even for a reader who knows next to nothing about Australian history, this is an enlightening glimpse into another threshold into the twentieth century.

This was great from start to finish. The most engaging true crime I've read. As a woman and attorney, I appreciated the author's bits of sarcasm throughout and her ability to tell the story without inserting her own political views. This is also a great example of strong women who persevered to gain for today's women the many rights and privileges we so often take for granted.

Historically interesting. The relentless pursuing of Louisa with such disregard for legal protocol was disturbing. I didn't know women were hanged this late in history (1800s). For me, the reading bogged down about halfway through - maybe because it seemed like each trial was a variation on the last. Sad episode in history and a contribution to women's history.
