Sophia Psarra is Professor at the Bartlett, University College London, UK. Previously, she was Associate Professor at the University of Michigan and Senior Lecturer at Cardiff University. I found this book intriguing, being a child of the 50s from European heritage, most of my early childhood consisted of cooking and eating with olive oil, lard and butter. It wasn't till much later, 1990, that I read about the bad/good fats and tried to follow the media hype regarding these fats - but the food never tasted good and I guiltily went back to butter and lard for special occasions - made no difference to my cholesterol level but the food tasted great.This book explores the background and facts on fat, it is a very interesting and enlightening book. It's no nonsense and simple approach explains that it is really much better for you when all that stuff that is sold as substitute butter and fat.I like this book, there are recipes about making pastry, fried and roasted food. It covers the use of beef, chicken, duck and pig fat. Don't know how the young generation, who may never have seen or tasted food with lard or butter, would view this book - but I certainly love it.Taste with out the guilt.

This was a very interesting book.The background was well-researched and even though some of the terms in the chapter entitled "A little chemistry, a little biology" are rather complicated, the author explains everything very thoroughly.There are great tips and explanations throughout the book in the beige and brown information blocks are very handy and add extra, compact knowledge to the book. I especially enjoyed the references to certain things in various European languages and cultures - what something is called in each language; what they used it for; what animal fats each culture traditionally used.The recipes are well-laid out with an interesting introduction to each recipe - be it a bit of its history or tips to adjust recipe etc. The methods are well set out step by step and even beginners will be able to make sense of what needs to be done.The photography is beautiful throughout the whole book. I personally would have liked to see a lot more photographs of the dishes in the recipes, I felt there were too few. I like to see photos of what the final dish is more or less supposed to look like.The resources section at the end is a great inclusion.The whole book takes me back to my childhood when my gran would fry eggs in sheep fat; we would save the bacon dripping to eat on toast with salt and pepper. As a farmer's wife with access to our own grass-fed cows and sheep, I will definitely be utilizing some of the knowledge I learnt in this book.Thank you to NetGalley and the publishers, Storey Publishing, for allowing me the opportunity to read this book.

Chesman’s long introduction extolling the virtues of animal fat over vegetable seed oils is laudable and educational. But when it comes right down to it, a diet that is low fat and high fiber just feels better. That being said, when it comes to fat, good tasting fats beat the heck out of nasty tasting fats, making lard, butter, and excellent olive oils the obvious choice for cooking. And that is exactly what Chesman advocates in this excellent cookbook, that works its way through the various animal fat products, detailing rendering methods, and cooking methods for each.This is a valuable addition to the cookbook shelf for the thinking and experimenting home cook.

This is truly a gorgeous cookbook full of fabulous information, recipes and photographs. As someone who would like to support eating whole foods with less waste, consuming natural fats from my geographical region (instead of buying coconut oil from Sri Lanka), and also adding more fats for my own health and energy, this is an INCREDIBLE resource.The author includes wonderful information about rendering and using fats so that readers feel comfortable with these (new to me!) ingredients, then provides a diverse sampling of recipes, from pastry crusts to roasted veggies to tasty entrees.One of my favorites aspects of the book -- and that may be because I'm a history geek -- is the way Andrea highlights the historic, cultural and evolutionary lineages of these techniques and products. As such, it makes learning about animal fats and using them in my own kitchen a layered experience, not only of my present explorations but also as a way to connect to the generations that used these methods in their own kitchens throughout the ages.

If there is anything that we know for sure it is that the science of food and health is changing rapidly and that what we know and knew are probably wrong. Look at what happened with coconut oil in Aug 2018. Yet Storey editors have not dissuaded Andrea Chesman, who has no health credentials whatsoever, from larding her book with polemics on fats in the diet. She cites no peer reviewed research, trots out the common conspiracy theories, does not accept that science is iterative, knows little about alternative cultural preferences (especially for "rancid" fats) and spouts her own personal truths at length. Allowing Ms Chesman this exposure to future embarrassment is unconscionable behavior on the part of editors, especially as the rant is pointless. No one who avoids animal fat will ever open the book. The photos would make vegetarians swoon.The discussion of caul fat is just wrong. Ms Chesman (or perhaps her editor) does not seem to know what a ruminant is and how ruminant digestion works. Several times pigs are included in sentences about ruminants.The text (of the ARC anyway) is choppy in places and could use some rearrangement of paragraphs. As usual with Storey, the ARC is prepared with horrible fonts that may or may not be changed in the final version. (Storey releases their books for review as long as 9 months before the publication date and does not send reviewers notifications of changes to the text or layout.)The cookery part is stunningly good in a Mrs. Beetonly sort of way, but taken as a whole experience, the book falls short.I received a review copy of "The Fat Kitchen: How to Render, Cure and Cook with Lard, Tallow and Poultry Fat" by Andrea Chesman (Storey) through NetGalley.com.

Marcus Rediker is Distinguished Professor of Atlantic History at the University of Pittsburgh and Senior Research Fellow at the Collège d’études mondiales in Paris. His books have won numerous awards and been translated into fourteen languages. They include The Many-Headed Hydra (Beacon Press, 2000; with Peter Linebaugh), Villains of All Nations (Beacon Press, 2004), The Slave Ship (2007), The Amistad Rebellion (2012), and Outlaws of the Atlantic (Beacon Press, 2015). Rediker is also the producer of the prize-winning documentary film Ghosts of Amistad: In the Footsteps of the Rebels (Tony Buba, director), about the popular memory of the 1839 Amistad rebellion in contemporary Sierra Leone. This is history “from the bottom-up,” bringing Benjamin Lay’s unique and amazing story as a hunchbacked, dwarf abolitionist from Essex County in England out of obscurity. Rediker shows that not only was Lay in the vanguard of the abolitionist movement, but as a compassionate humanist, a man for our own times. In addition to being a strident abolitionist, Lay was a vegetarian, an animal rights advocate, and an opponent of the death penalty. After the death of his wife Sarah in 1735, he moved into a cave near Abington, Pennsylvania, where he produced most of his own food and made his own clothing. He was well-known in the Philadelphia area – Benjamin Franklin published his book in 1738, and he was notorious among those who were the object of his wrath (namely slave-owners) at Quaker meeting houses. Lay does not seem to have been overly concerned about being a “little person,” although it seems he had to endure some mockery because of it. Nevertheless, it certainly did not curtail his radical activism. The thesis of the book is straightforward: Benjamin Lay brought together numerous strands of radicalism in his effort to condemn as the devil’s own device the institution of slavery. Lay brought religious, philosophical, working-class, abolitionist, and commoner perspectives to the table. The fact that these are all present and expressed through a single individual demonstrates, Rediker notes, that they can all be part of the same consciousness. The evidence the author presents for this is abundant. Benjamin Lay was born into the radical Quaker tradition, a third generation Quaker born in 1682 in Copford, Essex. By the time Benjamin reached adulthood, Quaker practices had toned down considerably from their early “inner light” visionary practices. Lay gave this practice new life, especially after he married Sarah Smith, who was also a hunchbacked dwarf. The spark that lit Lay’s (and Sarah’s) abolitionist fervor was a sojourn to Barbados in 1718. Two years on that hellish sugar island in the Caribbean set the couple, especially Benjamin, on his lifelong abolitionist path. The atrocities they witnessed defy description. To help alleviate the suffering, the Lays started a meeting for the enslaved, eventually calling down the wrath of the planter elite. Their subsequent campaign against slavery embraced Quaker practices from the early days of the religion. The author elaborates on three of these practices: 1) Public rants against ministers; 2) The refusal of “Hat Honor” (i.e., not removing one’s hat during the Quaker meeting); and, 3) The use of provocative street theater (Rediker opens the book with a stunning example of this). The author also shows how Lay’s working-class background allowed him to connect with enslaved people who were routinely worked to death. Lay’s work-life began as a shepherd, where he found peace in nature and the herding of sheep, no doubt a nurturing influence. He then trained as a glover, difficult and monotonous work that would have helped him identify with enslaved people who were forced to perform endless rote tasks throughout their short lives. He maintained some proficiency in this trade all of his life; Rediker notes that glover’s tools and supplies were in significant number in his will.Eventually, Lay made his way to London. There, the monotony of gloving led him to take up the life of a sailor, which brought him into contact with the diverse “motley crew” of that profession. Experiences in the world of sailors, along with his later trip to Barbados led him to de-racialize humanity. In his writing, Lay referenced the Bible, specifically Acts 17:26, which proclaims that all people are “made of one Blood.” In his 1738 book, All Slave-Keepers That Keep the Innocents in Bondage, Apostates, Lay did not use the word “race,” instead he used the less divisive word “color.” This reflected his experience with the motley crew of the eighteenth-century sailing ship.After immigrating to Philadelphia in 1732, Lay continued his abolitionist activism. Religion and politics merged with philosophy in his life-long self-education. Learning Lay’s worldview is an education not only in Quaker antinomianism, but Greek asceticism, particularly that of the Cynic philosophers. Most influential of the former was William Dell, a radical Chaplain in the New Model Army during the English Civil War. In Philadelphia, Lay had dabbled in bookselling, and Dell’s works were one of Lay’s chief offerings. In his books, which Lay highly praised, Dell advocated antinomianism – the notion that no authority is higher than that of one’s own “inner light” or inner voice. Dell also encouraged civic education for the masses in order that they, rather than a socio-economic elite, would and could wield power. These points would have been profoundly upsetting to the elites of seventeenth-century England.The library in Benjamin Lay’s cave also contained works of Greek philosophers, particularly those of the founder of Cynic thought, Diogenes, and his protegés Pythagoras, Crates, and Lucian. Rediker provides a thumbnail sketch of this worldview by defining a handful of crucial practices. These included parrhesia, the practice of speaking one’s mind regardless of how it will impact those in power. Autarkeia meant self-sufficiency without the baubles of material gain; askesis and karteria meant training in self-discipline and endurance, both mental and physical; and finally tuphos, where one severely challenged the notions of luxury, prestige, and wealth, considering them flaws in human character to be overcome. All of this, from antinomianism to Cynic philosophy was built on a commitment to treat others with love, which was to be given to all.Predictably, Marcus Rediker delved deep into the Quaker archives in both England and the U.S. He also made himself familiar with the historical literature on Quakers from this period, much of which was old ground for him. The book is written for the general public, but is erudite enough to appease the specialist. I personally loved both the book and getting to know Benjamin Lay three hundred years after his righteous fight for justice shook the Quaker world and, as Rediker argues, kick-started a Quaker abolitionist movement that, in turn, was the foundation of nineteenth-century abolitionism. During his lifetime, the Quaker dwarf was a giant in his way. His antinomianism, Cynic philosophy, and raw courage will be inspiring to those pursuing egalitarian justice today.

While his efforts were frowned upon and caused him no end of the approbation of his community, they were memorable enough to ultimately contribute to the future abolition of slavery generations after his death.

Using a myriad of sources including Lay's writings, (and even though Lay's papers were destroyed), the author explores the reasons for Lay's strong convictions about slavery and his guerilla theater tactics in bringing to light the horrors of slavery. Explaining his radical Quakerism, his courage against wealthy elites, and vegetarianism, Rediker has captured Benjamin Lay's relevance to present day and for the future.

I've been a Bible student for most of my life. For that reason I read many commentaries and translations of The Book in order to understand it better and how it informs my life.I had the good fortune to have discovered Eli Lizorkin-Eyzenberg's blog a couple of years ago, and in it was a series on the Book of John. It answered quite a few questions I had about that somewhat puzzling Gospel. Now, those blogs and much more have been included in Dr. Eli's latest book, entitled, The Jewish Gospel of John: Discovering Jesus, King of All Israel. It's written in easy-flowing prose, and reads like having a conversation with a friend. Verse by verse and story by story Dr Eli leads the reader through the historical and cultural roots and word-root meanings.Most of all, it creates an understanding of the Jewish political and social thought at the time, separating the few Jews who held tenuous power under the Roman structure, therefore felt threatened by this man, Jesus, who was an anathema and had such a popular following among the people.Many readers throughout time came to take John's catagoric reference to "the Jews" to understand that the whole Jewish population was responsible for Jesus' crucifixion and death. This idea is strongly refuted by Dr.Eli, as he argues that the small group of Pharisees who actually agitated for Jesus' death were most threatened by his growing popularity and abilities.My favorite part from the book is Jesus interview with the Samaritan Woman at Jacob's well. His explanations and alternate opinion about who she might have been and what it may have meant to the Samaritan readership of John shone a whole new understanding on it He also shines a light on the John 9: healing of the Man born blind, and what it meant to Jesus whole ministry, sets the scene and describes the town of Bethany where Lazarus was raised from the dead, and gives some background for the difference between being washed in the Pool of Bethesda, and in the pool of Siloam.I recommend Dr. Eli's book to anyone who has an abiding interest in the Bible New testament and having a better understanding of it.

In the modern, liberal, academic pursuit of the historical Jesus, the Gospel of John has been marginalized, dismissed, and even ignored as a credible source of information. Even Albert Schweitzer, who I consider one of the greatest Christian theologians, dismissed John's Gospel and focused on the synoptic gospels in his quest for the historical Jesus. John's more spiritual portrayal of Jesus has led many cynics in the academic community to dismiss it as a post-resurrection myth which puts words in the mouth of Jesus based upon the spiritual perspective of the Johannine community which spawned it. Other skeptics dismiss John's Gospel as being influenced by "Pauline" doctrines which have no historical value.The author, Eli Lizorkin-Eyzenberg, a scholar with a Jewish background, gives us a fresh new perspective of John's Gospel. the author claims that the New Testament doesn't need to be rewritten but needs to be read from a Jewish perspective. This book clearly demonstrates how the Gospel of John is thoroughly Jewish and how its author was intimately familiar with the background and environment of Jesus and his earliest Jewish followers.The author points out how the target audience for the gospel were not gentile converts but Israelites living outside of Judea, particularly Samaria and Jews living in the diaspora who had become alienated and marginalized by the more learned and orthodox Judean religious authorities referred to as the "IOUDAIOI". This term has been mistranslated over the years by gentiles as referring to the Jewish people as a whole and, tragically, has been used to demonize Jews. While the IOUDAIOI were the chief antagonists of Jesus in the gospel, Jesus himself and the author of the gospel came from this community. The prologue to the gospel indicates that Jesus belonged to this group but had been rejected by them. The difference between John's Gospel and the synoptic gospels is not a matter of authenticity but a matter of perspective.This book demonstrates how John's Gospel portrays Jesus as the Messiah of the end times who, as the Good Shepherd, would gather the lost sheep of Israel dispersed in foreign lands and unite the Northern Kingdom with the Southern Kingdom to unite Israel as one nation. The gospel drew its messianic vision from the prophets, primarily Ezekiel, Zechariah, and to a lesser extent Isaiah and Daniel. From John's perspective, the IOUDAIOI or Judean authorities are the shepherds who failed to accomplish this by rejecting Jesus and his message. Their control of the Temple and Jerusalem under the terms dictated by the Roman occupation enabled them to prosper at the expense of their fellow Israelites. John's Gospel was directed to a Jewish audience living outside of Judea who had been marginalized, the lost sheep of Israel.Throughout the gospel, Jesus' authority contradicts the authority of the IOUDAIOI. The popular prophet, John the Baptist and the signs and miracles Jesus performed testified that Jesus' authority came directly from God with no human intermediaries. Jesus never abrogated the Law of Moses. His disputes with the IOUDAIOI was in how it should be interpreted. Jesus didn't replace the Law with grace but added grace to the Law. In John's Gospel, salvation no longer comes from the Temple sacrificial system, but in the more accessible person of Jesus. The author of this book points out how there was no separation of body and soul in Judaism. The life is in the body and blood which Jesus bestows upon his followers as symbolized by the sacramental bread and wine.This book demonstrates how John's Gospel must be read against the background of the prophets, particularly Ezekiel, from which much of its imagery is derived. Ezekiel and Zechariah's vision of the future Temple being a source of living water bestowing life to the barren land and the Dead Sea is symbolic of Jesus as the new Temple imparting the life-giving Spirit on his followers. Tthe wind being breathed into the dry bones of Israel and giving them life has its counterpart of Jesus breathing the life-giving Spirit into his disciples. The image of the false shepherds who looked after their own interests who would be replaced by the Lord was used by the gospel's portrayal of Jesus as the Good shepherd who would lead the scattered sheep into the promised land.The author points out a number of Jewish traditions in John's gospel which a casual reader would overlook. Lazarus being raised to life on the fourth day to demonstrate Jesus authority to raise the dead uses the Jewish tradition of a soul hovering over the body for three days, after which, resurrection is impossible. A separate cloth to cover the face of the dead was another tradition unique to Jewish burial customs. The 153 fish caught in the net equals the sum total of the numerical value of the Hebrew letters which spells out "Sons of God". (see also Richard Bauckham)The author also provides a thought provoking theory in regard to Judas Iscariot's motivation in betraying Jesus. Judas may have been a zealot who advocated violent resistance to Roman rule. Judas may have felt that the arrest of Jesus would set in motion a revolt against Roman occupation by which Israel would gain its independence.Based upon the author's insights, I would conclude that John's Gospel could only have been understood and appreciated by a Jewish audience. The prophetic imagery in the gospel would not be fully grasped nor have any meaning to first century gentiles. Only one who was brought up in the Jewish faith could fully apprehend and appreciate the message which the gospel was trying to convey. The author's Jewish background has enabled him to discover this and pass this on to us in this book.In that regard Eli Lizorkin-Eyzenberg has done a superb job in shattering academic assumptions which tend to marginalize John's Gospel in regard to the study of the historical Jesus. John's Gospel gives us an authentic glimpse of what Jesus believed about himself and how he was perceived by his earliest Jewish followers.

My husband and I have sought out literature that explains the "new testament" from the perspective of the times: the context and understanding from when it was written. It is very encouraging that we are finding Jewish authors and scholars that are delving into explaining and teaching the "new testament" with their knowledge and expertise.
